Join a prestigious establishment in the heart of Marrakech as the Food & Beverage Operations Director. Within the luxury hotel industry, this role involves overseeing all restaurant activities to provide an exceptional customer experience while ensuring operational excellence and profitability of sales points.
The main goal is the constant elevation of service standards within the various dining areas. The pursuit of financial performance, combined with rigorous management of raw material costs, is the pillar of this strategic function. It also involves uniting teams around a culture of impeccable hospitality while innovating to strengthen the site's position in the local and international market.
Daily tasks include various missions aimed at maintaining impeccable quality and dynamic business development:
- Direct supervision of all sales points and kitchens to ensure optimal service flow.
- Definition and management of commercial strategies to optimize revenue.
- Management and talent development through the support of department heads and operational teams.
- Rigorous management of performance indicators (KPIs), P&L, and inventories to ensure profitability.
- Implementation of the most demanding hygiene, safety, and brand standards in the sector.
Required profile :
A higher education degree (Bachelor's degree or equivalent) minimum, ideally in hotel and restaurant management, is required to understand the complex challenges of this role.
Solid expertise gained through 10 to 20 years of professional experience in highly renowned hotel establishments allows for mastery of luxury codes and operational challenges of this scale.
Success in this role relies on a combination of managerial, strategic, and technical skills:
- In-depth mastery of financial management and cost optimization (food cost, prime cost).
- Proven ability to exercise inspiring leadership within multicultural teams.
- Excellent command of high-end service standards and a keen sense of detail.
- Proficiency in hotel management tools and merchandising techniques.
- Ability to propose innovations in culinary offerings and restaurant concepts.
